Unfortunately it's impossible to change the difficulty setting of Kingdom Hearts 3 for a save you have already played on. You have to decide the difficulty mode when you begin a new save, and there is currently impossible to change this after you have selected one of the three.
This means that you will have to start a new game if you want to play on another difficulty setting. This obviously stops a lot of people from changing it, since they don't want to lose their progress, but it's the only way to do it.
We can only hope that a patch adds in the ability to change the difficulty mode in Kingdom Hearts 3 at a later date, because it can be very frustrating to be stuck on the wrong difficult for a game that is as long as this.
